Large quantity of protein and fat is accumulated in the liver during of gonad maturation. In different regions of the Indian Ocean equatorial zone the content of dry substance in the Sthenoteuthis oualaniensis liver is rather stable. Sthenoteuthis oualaniensis from the southern part of the tropical zone are characterized by a considerably higher content of dry substance in the liver which is determined, first of all, by the elevated level of protein reserves.Печень кальмаров содержит высокий процент сухого вещества, жира и обезжиренного сухого вещества. В период созревания гонад в печени накапливается большое количество белка и жира. В различных районах экваториальной зоны Индийского океана содержание сухого вещества в печени кальмаров достаточно стабильно. В южной части тропической зоны кальмары характеризуются намного большим содержанием сухого вещества в печени, которое определяется прежде всего повышенным уровнем белковых резервов.ru
